Pairing
This cuvée pairs beautifully with refined dishes such as free-range poultry, risotto with porcini mushrooms and meat jus, Alsatian foie gras terrine with citrus chutney, veal sweetbreads roasted in brown butter flavored with sage, or seared red tuna steak with smoked sabayon.
Nothing enhances cheese better than bubbles, but not just any cheese—preferably hard cheese! A selection of mature cheeses will bring out their character and the strength of their terroir to highlight our heritage: mature Tomme d’Alsace, aged Comté, mature Salers or Laguiole, Fleur de Tête de Moine, aged Cheddar, and more.

Vinification
The perpetual reserve is a dynamic aging method. Inspired by the Spanish Solera system used in Andalusia—which involves stacking barrels on top of one another…
Since 2017, the Ruhlmann-Schutz family has blended the new vintage with older ones in a dedicated tank each year. To achieve this, one-third of the tank’s contents is drawn off and bottled, making room for the current year’s blend of grape varieties (see sidebar)—a process that repeats year after year.
This method allows the older wine to “educate” the younger wine. Once bottled, the wine undergoes a secondary fermentation and produces carbon dioxide, creating the sparkle. This is followed by a period of aging on the lees (in the bottle) for over 30 months, allowing the wine’s profile to refine.
