Description

Terroir

These grapes come from a thirty-year-old vine planted on a rich clay-limestone terroir with very deep roots.
The vine gives a low yield of small but very concentrated grapes.
For this Sélection de Grains Nobles, there is an over-ripening of the grapes and a concentration of noble rot. At the beginning of December, during the harvest, the grapes have a candied aspect.

Pairing

Elegant and powerful, this wine is ideal to start or end a meal on an extreme note. It goes perfectly with foie gras.

Service

Serve between 8 and 10°C

Ageing

It is a wine for laying down, which can be enjoyed today as well as in 10 or 15 years.

Vinification

The grapes are picked and sorted by hand, then pressed in a pneumatic press. Traditional fermentation under temperature control.
