Description
The Adventure is in the inside.
Terroir
Silt, clay and limestone soil with pebbles. Sea spray provides moisture and freshness.
Pairing
Perfect for your red meats, game and BBQ. It will also go well with cheese and delicatessen platters… but we actually enjoy it throughout a meal.
Service
Serve at 15°C / 59°F
Ageing
Up to 6 years (but open it earlier!)
Vinification
Harvesting at maturity and at optimal temperature, early in the morning. The grapes are sorted and destemmed and received by gravity in order to keep the berries healthy and of high quality. Traditional vinification, maceration for 3 to 5 weeks, pressing of the marc in a pneumatic press, maturing in stainless steel tanks with temperature control.
