Description

Produced from exceptional terroir and carefully cultivated vines, this wine has been selected to join the prestigious Cave Historique des Hospices de Strasbourg. After careful vinification and eight months of aging in oak barrels, it was bottled on site following a double tasting to guarantee excellence and tradition.

Terroir

This Pinot Noir comes from a clay-limestone terroir.
It comes from old vines which are planted halfway up the hillside and the roots are very deep.
For a good ground structure, the soil is worked in alternation: one row is ploughed, the next one is grassed.

Vinification

The grapes are hand-picked and then pressed.
After fermentation under temperature control, this wine was selected during a rigorous tasting to be admitted to the Cave des Hospices de Strasbourg.
It was matured for 8 months in oak barrels, then tasted a second time, to obtain the privilege of being bottled at the Hospices, after several months of tireless efforts for an irreproachable quality.
