Description
XXII is our estate’s UFO cuvée… it is a unique blend of 22 grape varieties.
A slightly tinted, dry, elegant, and structured wine. On the palate, it is a white wine.
Terroir
The “collection” plot is located at the entrance to Château Valmont on clay-limestone soil dotted with a few rounded pebbles.
Each row of vines is a different grape variety. This plot brings together all 22 grape varieties of the Corbières appellation.
- Bourboulenec, White Carignan, Black Carignan, Cinsault, Clairette, White Grenache, Grey Grenache, Black Grenache, Lledoner Pelut, Macabeu, Marsanne, Marselan, Mourvèdre, Muscat Petit Grains, White Piquepoul, Black Piquepoul, Roussanne, Syrah, White Terret, Black Terret, Vermantino/Rolle, Viognier.
Pairing
Enjoy chilled as an aperitif, but it also pairs well with fish or white meat served with a creamy sauce.

Up to 5 years
Vinification
All grapes are harvested by hand, and at the same time, some varieties are ripe, while others are less so. The harvest date will determine the balance of the wine and the grape varieties.
The grapes are then pressed directly in a pneumatic press. The salmon color is obtained from the coloring matter present in some of the grape varieties. Finally, maceration takes place in the press.
This wine is vinified without additives, using indigenous yeasts.
Unfiltered.
