Description
Founded in 1395, the Cave des Hospices is an iconic site in Alsace’s wine-growing heritage. Located in the heart of the civil hospital, it continues a centuries-old tradition by selecting wines from the best terroirs. Each wine admitted is rigorously tasted, aged under optimal conditions, and then bottled on site—a guarantee of excellence and authenticity.
Terroir
It comes from a calcareous, silty and clayey soil, which allows the deep rooting of the vine, older than thirty years old.
The south-western facing, on platforms on the hillside, provides an ideal sun exposure.
Pairing
It is a perfect accompaniment to the most refined dishes: fish, shellfish, white meat, etc…

Vinification
The grapes are hand-picked and then pressed.
After fermentation under temperature control, this wine was selected during a rigorous tasting to be admitted to the Cave des Hospices de Strasbourg.
It was matured for 8 months in oak barrels, then tasted a second time, to obtain the privilege of being bottled at the Hospices, after several months of tireless efforts for an irreproachable quality.
